Zucchini is high in vitamin C and Potassium and also has a good amount of vitamin A. Adding a yellow zucchini is a great additional color to this side. The key is to not overcook them. Just slightly browned on each side. Very simple to make and so delicious!
Ingredients:
One organic green zucchini
One organic yellow zucchini
2 cloves of garlic
Thyme or any herbs you have
1 tsp of sea salt
Black pepper to taste
2 teaspoons of coconut oil
Instructions:
Cut both zucchini in round pieces, chunky
Heat cast iron skillet at medium low until it’s hot
Add coconut oil
Add zucchini and thyme
Flip on other side after 2 minutes
Mix again after another 2 minutes
Add garlic and salt, and mix for another 2 minutes
Serves 2

This sounds great! My go to is roasting vegetables, but your directions are very clear and seem easy to follow. I am going to try this recipe.
Roasting is a wonderful choice! This is another way of making a quick veggie when you don’t have much time and you have just come home from work and need to throw something together. That’s really how I came up with this one!
I love this recipe, is there other vegetables that i can replace with the same ingredients and cooking time ? Zuchini is not one of my veggies so glad to be adding it into my weekly habit.
